large potatoes, peeled
Salt to taste
1/2 teaspoon chili powder
1/2 teaspoon cumin, ground
1/2 teaspoon garam masala
Ice-cold water
Oil for deep-frying
Method :
Cut the potatoes into thin slices before
cutting the slices into matchstick strips. Soak the potato strips in
ice-cold water. Drain and dry well on absorbent paper. Heat up a
deep-frying pan with the oil and when very hot, fry the potato straws, a
handful at a time. Fry till the potato straws are golden and crisp.
Remove with a slotted spoon and drain well on absorbent paper. When all
the potato straws are fried, sprinkle with the salt and spices mixed
together. |
