Ingredients :
1 cup sago
3 cups water
1 cup soft brown sugar, lightly packed
1 cup water, extra
1 cup coconut cream, well chilled
Method :
Fill a bowl with water and soak the sago
for 1 hour, drain. Heat a pan and add in the sago, 2 tablespoons of soft
brown sugar and bring to the boil over low heat. Stir constantly. Reduce
heat and simmer for about 8 minutes, stirring occasionally. Cover with a
lid and cook for 3 minutes, until the mixture thickens and the sago
grains are translucent. Fill 6 wet molds with the sago mixture up to the
half level. Allow to set in the refrigerator for 2 hours.
Combine the remaining soft brown sugar
with the extra water in a small pan. Cook and stir constantly over low
heat until the sugar fully dissolves. Simmer for about 5 minutes until
the sugar syrup thickens. Remove from heat and set aside to cool. When
serving, remove sago from the mold and top with a little of the sugar
syrup and coconut cream. |
