Is it true that artichokes are incompatible with any wine?
It is not exactly true. Globe artichokes contain an acid called cynarin that will affects our tastebuds. So when food and wine consumed with them or soon after, will taste sweeter than they normally would. Some manufacturers for baby-food actually use mashed soft artichoke bases into vegetable purees to appeal to the sweet palate of the infant too. Adults have found that a young white riesling or a light red wine, are good with an artichoke dish.
