Almond praline is actually a mixture of almonds and caramelized sugar, ground in a food processor after cooking. Sometimes, it is also ground up by hand. It is used as a crunchy flavoring for ice cream, creamy desserts, pastry and cakes, or even sprinkled over puddings and gateaux. Mixed with cream, chocolate and rum, praline makes wonderful truffles. Once made, praline can be kept for one to two weeks in an airtight container.
