Cut the tofu into small
equal squares and sprinkle salt evenly over each piece.

Mix ingredients A well
into a batter.

Mix ingredients B well and
set aside.

Mince the onions.

Remove stems from the
garlic, pat with the flat side of a knife to remove skin and
mince.

Coat each square tofu with
flour and then dip in the batter.

Deep-fry the tofu in the
hot oil until golden brown. Remove and drain.

To make the dip, keep 1
tablespoon oil in wok.

Stir-fry onions, ginger
and garlic until fragrant.

Add mixed ingredients B
and cook until thick.

Serve tofu with dip on the
side.
