15 ml/1 tbsp olive oil
25 g/1 oz/2 tbsp butter or margarine
4 lean beef slices
1/2 red (bell) pepper, chopped
1/2 green pepper, chopped
1/2 yellow pepper, chopped
250 ml/8 fl oz/1 cup soured (dairy sour) cream
5 ml/1 tsp wholegrain mustard
10 green peppercorns
Salt and freshly ground black pepper
Rice or pasta, to serve

Method :
Heat the oil, then add the butter or margarine. When the butter or
margarine has melted, add the beef and fry (saute) until browned on both
sides, then cook for 4 minutes. Stir in the peppers and soured cream and
cook for 5 minutes. Then stir in the remaining ingredients and season to
taste with salt. Heat through gently and serve with rice or pasta. |
