Preheat the oven to 150oC.

Sift the flour,
bicarbonate of soda and baking powder on to the table.

Mix in the desiccated
coconut evenly, then make a well in the center.

Put the sugar, lard and
egg into the well and mix thoroughly.

Draw in the dry
ingredients and work into a soft dough.

Roll out the dough and cut
into 32 equal portions.

Shape each piece into a
ball, then press with your thumb to make a hole in the center.

Put a quartered glace
cherry and brush the top of the dough with the beaten egg yolks.

Arrange on a greased
baking tray.

Bake in the preheated oven
for 15 to 20 minutes until golden brown.
