Flaky Cakes with Ham and Turnip Recipe

Outer Pastry

Warm water
Plain flour
Lard
Ham
Diced chives
Sugar
Pepper
Turnip
Salt
Five-spice powder

Method :
Pastry -
-
Sift the flour on to a table
and make a well in the center.

Add the warm water and knead
into a smooth dough.

Sift the flour on to the table
and lightly press into a soft dough with the lard.

Roll up both pieces of dough
into long strips and cut each into 12 equal portions.

Flatten a piece of outer
pastry and wrap it in a piece of inner pastry.

Carefully flatten into a long
thin strip, then roll up.

Repeat this process once more
and press into a flat round.
Filling -
-
Mince the ham.

Peel, wash and shred the
turnip, marinate with a little salt, then squeeze out the excess
water.

Mix the minced ham, shredded
turnip, diced chives and all the seasoning together.
To complete -
-
Divide the filling into 12
equal portions.

Wrap a portion of filling with
a piece of pastry, draw the edges together, and seal securely.

Flatten to about 0.5 cm thick
with the sealed edge facing down.

Repeat the same process with
all the pastry and filling.

Heat and grease a griddle.
-
Shallow-fry the cakes over low
heat until golden on both sides.

Serve hot.
