Apple Betty Recipe

Ingredients : Serves 4

750 g/1.75 lb cooking (tart) apples, peeled, cored and sliced
30 ml/2 tbsp water
1 lemon
1 orange
100 g/4 oz sultanas (golden raisins)
25 g/1 oz/2 tbsp soft brown sugar

100 g/4 oz/1 cup wholemeal breadcrumbs
50 g/2 oz/0.5 cup walnuts, finely chopped

25 g/1 oz/2 tbsp butter or margarine, chopped
2.5 ml/0.5 tsp ground cinnamon
Cream or Custard Sauce, to serve

Method :

Cook the apples in the water for 10 minutes until just soft. Grate the rind from the lemon. Cut the lemon and orange into quarters and puree the flesh in a food processor or blender. Add the sultanas, half the sugar and the lemon rind and blend to mix. Add the apples. Place half the mixture in the base of a deep ovenproof dish. Mix together the breadcrumbs and nuts and spread half the mixture over the top, followed by half the remaining sugar. Then add the rest of the apple mixture, the remaining breadcrumb mixture and the remaining sugar. Dot the butter or margarine on top and sprinkle with the cinnamon. Bake in a preheated oven at 190°C/375°F/gas mark 5 for 35 minutes until crisp on top. Serve hot with cream or Custard Sauce.
