Apple and Rhubarb Crumble Recipe

Ingredients : Serves 4

450 g/1 lb cooking (tart) apples, peeled, cored and thinly sliced
300 g/12 oz rhubarb, cut into chunks

15 g/1 oz/2 tbsp light brown sugar

75 g/3 oz butter or margarine
100 g/4 oz/1 cup plain (all-purpose) flour

50 g/2 oz/4 cup wholemeal flour
50 g/2 oz/0.5 cup caster (superfine) sugar

1.5 ml/0.25 tsp ground cinnamon
Single (light) cream or Custard Sauce, to serve

Method :

Put the fruit in a 1.2 liter/2 pt/5 cup ovenproof dish and sprinkle with the brown sugar. Rub the butter or margarine into the flours until the mixture resembles breadcrumbs, then stir in the caster sugar and cinnamon. Sprinkle over the fruit. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 30 minutes until crisp and golden brown. Serve with cream or Custard Sauce.
