275 g/10 oz/2.5 cups plain (all-purpose) flour
A pinch of salt
75 g/3 oz butter or margarine
50 g/2 oz lard (shortening) or vegetable fat
15 ml/1 tbsp caster (superfine) sugar
60 ml/4 tbsp water
4 cooking (tart) apples, peeled and cored
50 g/2 oz/0.25 cup soft brown sugar
5 ml/1 tsp ground cinnamon
30 ml/2 tbsp milk

Method :
Mix together the flour and salt, then rub in the fats until the mixture
resembles fine breadcrumbs. Stir in 5 ml/ 1 tsp of the caster sugar and
add just enough of the water to bind to a pastry (paste). Roll out on a
lightly floured surface and cut into four rounds, each large enough to
cover an apple, and place an apple in the centre of each round. Mix
together the brown sugar and cinnamon and use the mixture to fill the
holes in the centre of the apples. Dampen the edges of the pastry and draw
it up to cover each apple, sealing the edges together well. Place on a
greased baking (cookie) sheet with the joins underneath. Brush with the
milk and sprinkle with the remaining caster sugar. Bake in a preheated
oven at 200°C/400°F/gas mark 6 for 40 minutes until golden. |
