Brandied Peaches Recipe

Ingredients : Serves 4

4 ripe peaches
30 ml/2 tbsp lemon juice
25 g/1 oz/2 tbsp caster (superfine) sugar

60 ml/4 tbsp brandy
300 ml/0.5 pt/1.25 cups whipping cream, whipped

Method :

Blanch the peaches in boiling water, then remove the skins. Toss the peaches in the lemon juice, place in a serving dish and prick with a fork. Sprinkle with the sugar and brandy. Cover and chill for several hours until the flavors have developed. Serve with the whipped cream.
