Caribbean Bananas Recipe

Ingredients : Serves 4

4 bananas
50 g/2 oz soft brown sugar

30 ml/2 tbsp orange juice
A pinch of grated nutmeg
A pinch of ground cinnamon
30 ml/2 tbsp rum
25 g/1 oz/2 tbsp butter or margarine

Cream or ice cream, to serve

Method :

Halve the bananas lengthways and place in a baking dish. Mix together the sugar, orange juice, spices and rum and pour over the fruit. Dot with the butter or margarine and bake in a preheated oven at 230°C/450°F/gas mark 8 for 15 minutes, basting from time to time. Serve hot with cream or ice cream.
