450 g/1 lb/4 cups plain (semi-sweet) chocolate
Grated rind and juice of 1 orange
50 g/2 oz butter or margarine
30 ml/2 tbsp brandy
2 eggs, separated
2 egg yolks
150 ml/0.25 pt whipping cream, whipped
25 g/1 oz milk (sweet) chocolate, grated

Method :
Melt the chocolate in a bowl over a pan of hot water, then stir in the
orange rind and juice and the butter or margarine. Remove from the heat
and stir in the brandy. Beat the egg yolks thoroughly together, then
strain the chocolate mixture into the eggs, beating well all the time.
Leave to cool. Beat the egg whites until stiff, then gently fold them into
the chocolate mixture. Pour into individual glass dishes and chill for at
least 2 hours before serving. Decorate with the cream and grated
chocolate. |
