100 g/4 oz/1 cup desiccated (shredded) coconut
2 bananas, mashed
75 g/3 cup soft brown sugar
A few drops of vanilla essence (extract)
30 ml/2 tbsp Cointreau
A pinch of baking powder
Corn oil, for deep-frying

Method :
Reserve a quarter of the coconut, then mix the remaining coconut with all
the remaining ingredients. Roll 5 ml/1 tsp quantities of the mixture into
balls, roll in the reserved coconut, then fry (saute) in deep hot oil for
3 minutes until golden brown on all sides. Drain well on kitchen paper
(paper towels) and serve immediately. |
