225 g/8 oz/4 cups wholemeal breadcrumbs
100 g/4 oz/0.5 cup Muscovado sugar
100 g/4 oz sultanas (golden raisins)
100 g/4 oz raisins
25 g/1 oz/0.25 cup almonds, finely chopped
25 g/1 oz/0.25 cup brazil nuts, finely chopped
1 eating (dessert) apple, peeled, cored and grated
1 banana, chopped
10 ml/2 tsp ground cinnamon
Grated rind and juice of 1 lemon
A pinch of salt
2 eggs, beaten
150 ml/0.25 pt milk

Method :
Mix together all the dry ingredients, then stir in the eggs. Add enough of
the milk to make a firm but not stiff mixture. Spoon into a greased 1.2
liter/2 pt/5 cup pudding basin and cover with pleated greaseproof (waxed)
paper. Place in a large saucepan and add enough boiling water to come
half-way up the side of the basin. Cover and steam for 4.5 hours, topping
up with boiling water as necessary. |
