      Method : 
      Mix together the wine, water and sugar in a heavy-based saucepan and 
      dissolve over a gentle heat, then boil until syrupy, without stirring. 
      Stand the pears, stalks upwards, in the pan. Cut a circle of greaseproof 
      (waxed) paper with holes in for the stalks to poke through and place it 
      over the pears. Boil for 5-8 minutes, basting occasionally, until the 
      pears are just tender. Carefully remove the pears to a serving dish. If 
      the syrup is thin, bring it back to the boil, then mix the arrowroot with 
      a little cold water and stir it into the syrup. Boil for about 5 minutes 
      until thick and clear, then allow to cool. Spoon over and around the pears 
      and serve. |
