Walnut Pudding Recipe

Ingredients : Serves 4

150 g/5 oz butter or margarine

150 g/5 oz soft brown sugar

3 pears, peeled, halved and cored

6 whole walnuts
25 g/1 oz/0.25 cup walnuts, ground

2 eggs
100 g/4 oz/1 cup self-raising (self-rising) flour
5 ml/1 tsp mixed (apple-pie) spice

15 ml/1 tbsp milk
25 g/1 oz/0.25 cup rolled oats
Cream or Custard Sauce, to serve

Method :

Grease the base of an ovenproof dish with some of the butter or margarine and sprinkle with 15 ml/1 tbsp of the sugar. Place a walnut in the dip in each pear half and arrange the pears, flat-side down, on the base of the dish. Cream the remaining butter or margarine and sugar until smooth, then mix in the ground walnuts, eggs, flour, spice, milk and oats. Spoon the mixture over the pears and bake in a preheated oven at 190°C/375°F/gas mark 5 for 35 minutes until well risen and golden brown. Turn out of the dish and serve with cream or Custard Sauce.
