Green Beans with Onion, Garlic & Tomato Recipe

Fresh green beans
Medium onions, sliced thinly
Garlic, very finely diced
Red-ripe tomatoes
Olive oil
Salt
Water
Dried oregano (optional)
Freshly ground black pepper

Method :
- Cut
the stems off the beans and then cut them into 1 inch length
pieces.

Drop the tomatoes into a boiling water and boil for 15 seconds.

Remove to a bowl of ice water, then peel.

Chop the tomatoes into 1/2 inch pieces.

Heat the oil in a non-stick wok and stir fry the garlic for 30
seconds or until golden.
- Add
in the onions and stir fry over medium heat for 2-3 minutes making
sure that the garlic is not burnt.
- Add
the tomatoes, beans, salt, pepper, oregano and water. Then bring
to a boil.

Cover, lower the heat and simmer for 10-15 minutes before
uncovering.

Increase the heat to reduce the liquid until it's thick.

Serve with steamed white rice for a complete meal.
