Tamarind Fish Curry Recipe

White firm-flesh fish
Turmeric powder
Onion, sliced
Green chili, sliced
Curry leaves
Fenugreek
Mustard seeds
Cumin
Fennel
Coriander Powder
Fish curry powder
Tamarind paste mixed with 300ml of water

Method :
- Cut the fish into
bite-sized pieces.
- Coat with turmeric powder
and 1 teaspoon salt.
- Fry in 3 tablespoons
cooking oil until golden on all sides. Set aside.
- With the remaining oil,
fry the onion until translucent and soft. Add chilies and the
curry leaves.
- Reduce heat and add
fenugreek, mustard seeds, cumin, fennel and coriander
powder.
- Stir fry until scent
is released before adding curry powder and fry briefly.
- Return fish to the pan,
add tamarind water (discard seeds and pulp) and simmer until fish
is cooked.
- Garnish with chopped
coriander.
