Tamarind Fish Curry Recipe

Tamarind Fish Curry Recipe

Ingredients :

500g

White firm-flesh fish

Turmeric powder

Onion, sliced

Green chili, sliced

Curry leaves

Fenugreek

Mustard seeds

Cumin

Fennel

Coriander Powder

Fish curry powder

Tamarind paste mixed with 300ml of water

Method :
  1. Cut the fish into bite-sized pieces.
  2. Coat with turmeric powder and 1 teaspoon salt.
  3. Fry in 3 tablespoons cooking oil until golden on all sides. Set aside.
  4. With the remaining oil, fry the onion until translucent and soft. Add chilies and the curry leaves.
  5. Reduce heat and add fenugreek,  mustard seeds, cumin, fennel and coriander powder.
  6. Stir fry until scent  is released before adding curry powder and fry briefly.
  7. Return fish to the pan, add tamarind water (discard seeds and pulp) and simmer until fish is cooked.
  8. Garnish with chopped coriander.
