15 ml/1 tbsp oil
4 pork chops
1 onion, chopped
0.5 green (bell) pepper, chopped
15 ml/1 tbsp plain (all-purpose) flour
400 g/14 oz/1 large can of tomatoes, chopped
10 ml/2 tsp Dijon mustard
15 ml/1 tbsp Worcestershire sauce
2.5 ml/0.5 tsp light brown sugar
Salt and freshly ground black pepper

Method :
Heat the oil in a large frying pan (skillet) and brown the chops on both
sides. Transfer to an ovenproof dish. Fry (saute) the onion and green
pepper in the oil until soft but not brown, stir in the flour and cook for
1 minute. Add the remaining ingredients, seasoning to taste with salt and
pepper. Bring to the boil, stirring constantly, until the sauce is thick
and smooth. Pour over the chops, cover and bake in a preheated oven at
180°C/350°F/gas mark 4 for 30 minutes. |
