Lamb Meatloaf with Taco Topping Recipe

Ingredients : Serves 4

2 onions, chopped
1 garlic clove, chopped
450 g/1 lb minced (ground) lamb

5 ml/1 tsp chili powder
50 g/2 oz/1 cup fresh breadcrumbs

5 ml/1 tsp Tabasco sauce
Salt and freshly ground black pepper

100 g/4 oz/1 cup strong cheese, grated

150 ml/0.25 pt taco sauce
25 g/1 oz corn chips, broken into pieces

Method :

Mix together the onions, garlic, lamb, chili powder, breadcrumbs and Tabasco sauce and season to taste. Press half the mixture into a greased 900 g/2 lb loaf tin (pan), sprinkle in half the cheese and top with the remaining mixture. Cover and bake in a preheated oven at 180°C/350°F/gas mark 4 for 45 minutes, then leave to stand for 10 minutes. Turn the loaf out on to an ovenproof plate and brush with the taco sauce. Sprinkle with the remaining cheese and the corn chips. Return to the oven at 200°C/400°F/gas mark 6 for 10 minutes until the cheese has melted. Serve sliced, hot or cold.
