Lamb with Mushrooms and Herbs Recipe

Ingredients : Serves 4

15 ml/1 tbsp oil
4 lamb leg steaks
1 onion, chopped
1 garlic clove, crushed
100 g/4 oz chestnut mushrooms, sliced

400 g/14 oz/1 large can of tomatoes, chopped
15 ml/1 tbsp chopped parsley
2.5 ml/0.5 tsp rosemary
2.5 ml/0.5 tsp chopped basil
2.5 ml/0.5 tsp sugar
60 ml/4 tbsp Chicken Stock

Boiled new potatoes, to serve

Method :

Heat the oil and fry (saute) the steaks until browned on both sides, then reduce the heat and fry gently until cooked through. Transfer to a warm serving dish and keep warm. Add the onion and garlic to the pan and fry until soft but not brown, then stir in all the remaining ingredients, bring to the boil and simmer, stirring occasionally, for 10 minutes until thick and well combined. Spoon over the steaks and serve with new potatoes.
