25 g/1 oz/2 tbsp butter or margarine
4 pork chops
1 onion, chopped
225 g/8 oz mushrooms, sliced
75 ml/5 tbsp dry cider
30 ml/2 tbsp lemon juice
150 ml/0.25 pt soured (dairy sour) cream
Salt and freshly ground black pepper

Method :
Melt the butter or margarine and fry (saute) the chops until browned on
both sides, then transfer them to four squares of kitchen foil. Add the
onion and mushrooms to the pan and fry (saute) until soft but not brown.
Stir in the cider and lemon juice, bring to the boil and boil until
reduced by half. Remove from the heat, stir in the cream and season to
taste. Spoon over the chops, then fold up the foil and seal the edges into
parcels. Place the parcels in an ovenproof dish and bake in a preheated
oven at 180°C/350°F/gas mark 4 for 1 hour. Serve the pork in the foil and
let everyone open their own parcel. |
