4 large baking potatoes
8 pork sausages
225 g/8 oz/2 cups Cheddar cheese, grated
30 ml/2 tbsp milk
50 g/2 oz/0.25 cup butter or margarine
1 egg, beaten
15 ml/1 tbsp soured (dairy sour) cream
Salt and freshly ground black pepper

Method :
Prick the potatoes with a fork and bake in a preheated oven at
190°C/375°F/gas mark 5 for 1.25 hours until soft. Place the sausages in a
roasting tin (pan) and bake with the potatoes for the last 45 minutes
cooking time. Halve the potatoes lengthways and scoop out the insides. Mix
with the cheese, milk, butter or margarine, egg and cream and season to
taste. Pile half the mixture back into the potato skins, place a sausage
on each, and pile on the remaining mixture. Return to the oven for 10
minutes until browned and crispy on top. |
