Kerala Mutton Fry with Green Chilies Recipe

Boneless mutton
Oil
Curry leaves
Medium onions, ground
Garlic paste
Ginger paste
Green chilies, sliced
Red chili powder
Turmeric powder
Salt
Medium tomatoes, chopped
Tamarind soaked in 1/2 cup hot water
Sugar

Method :
-
Wash meat, pat dry and cut
into 3 cm cubes.

Heat oil in a non-stick
pan, add curry leaves and fry for a few moments.

Add onions, garlic, ginger
and half the green chilies, and fry till golden brown.

Mix in spice powders, salt
and meat, and fry for 7-8 minutes, stirring frequently.

Add tomatoes and fry till
oil bubbles on the surface, stirring occasionally.

Stir in 1 1/2 cups water,
transfer to a pressure cooker and cook under pressure for 15
minutes.

Allow cooker to cool
before opening it.

Extract tamarind pulp, and
add with sugar and remaining green chilies.

Mix well and simmer for
8-10 minutes before serving with white steamed rice.
