Ingredients :
2 x 450g crabs
2 red chili peppers
1 green pepper
5 pieces fresh ginger
4 scallions
3 cloves garlic
2 cups peanut oil for frying crabs
3 teaspoons salted fermented soy beans
8 tablespoons chicken stock
Seasoning
1 teaspoon sugar
2 teaspoons oyster sauce
2 teaspoons rice wine
Salt to taste
Method :
Thoroughly clean the crabs and chop into 6
pieces each. Mince the chili and the
green pepper (capsicum). Slice the fresh ginger and cut
the onions into 2cm lengths. Crush and chop the garlic. Heat the oil in a pan and
add the crab, ginger and onions. Fry for 2 minutes and
remove from the pan to drain. Re-heat the pan to smoking
point and add 1 tablespoon oil. Fry the garlic and beans
for 10 seconds, then return the crab to the pan. Mix the seasoning
ingredients with the stock or chicken soup and add the mixture to
the pan. Turn and stir contents for
30 seconds. Serve immediately while hot with steamed white rice.
