Ingredients :
500 g beef
4 tablespoons lime juice
8 tablespoons cooking oil
6 shallots, sliced finely
4 kaffir lime leaves
15 red chilies, ground coarsely
Salt to taste
Method :
Remove the fat and sinew from the beef and
slice thinly. Knead the beef with 2 tablespoons lime juice and let it
stand for 10 minutes. Use a baking pan to spread the beef and dry in the
sun until nearly crisp. Alternatively, bake in an oven with low heat
until the juices are absorbed. Heat a wok with oil and fry the beef
until cooked. Drain and set aside. Saute the shallots until golden
brown, then add the kaffir lime leaves and chilies. Add the remaining
lime juice and salt when the chilies are cooked. Toss in the beef and
stir well. Serve hot.
