Ingredients : Serves 6 4
cups cold cooked rice
250 g raw shrimps
500 g pork
3 medium onions
3
cloves garlic
3
eggs, beaten with salt and pepper to taste
1/2 teaspoon dried shrimp paste
6
scallions, thinly sliced
2
tablespoons light soy sauce
3
tablespoons onion flakes
1
green cucumber, sliced thinly
Salt and pepper to taste
Oil for frying
Method :
Heat a frying pan with a little oil and
make an omelet with half the beaten eggs. Turn on to a plate to cool but
do not fold the omelet. Repeat the process for the remaining beaten
eggs. When cool, roll up both omelets and cut into thin strips. Shell
and devein the raw shrimps. Cut the pork into fine strips. Chop onions
roughly and put in blender container with garlic and dried shrimp paste.
Cover and blend to a paste. Heat a wok with 3 tablespoons of oil and fry
the blended ingredients until cooked. Add the raw shrimps and meat to
wok and fry, stirring constnatly, until they are cooked. Add 2
tablespoons more oil and when hot, stir in the rice and scallions,
tossing and mixing thoroughly until very hot. Sprinkle with soy sauce
and mix evenly. Scope to a serving dish and garnish with strips of
omelet, fried onion flakes and sliced cucumbers by the side.
