Ingredients :
500 g raw shrimps, shelled
1/2 coconut, shredded
Banana leaves
Spices (ground)
6 red chilies, seeded
2 teaspoons cilantro, roasted
3 kaffir lime leaves
4 cloves garlic
8 shallots
2 teaspoons galangal, chopped
4 candlenuts, fried
1 teaspoon tamarind juice
2 teaspoons salt and sugar
Method :
Chop the raw shrimps and combine with
shredded coconut and ground spices. Mix well. Wrap 1.5 tablespoons of
the mixture with a banana leaf. Wrap the leaf up and secure the ends
with toothpicks. Continue to wrap the rest of the mixture until
finished. Grill over hot charcoal or bake in an oven until cooked. Serve
hot in the banana leaves.
