Ingredients :
1 kg chicken, cut into small bite-size
pieces
1/2 turmeric leaf, sliced finely
3 tablespoons oil
1 teaspoon salt
2 tablespoons lime juice
1 pandanus leaf, sliced finely
3 kaffir lime leaves, sliced finely
2 stalks lemon grass, bruised
4 green chilies, sliced coarsely
2 scallions, cut into 2 cm length
25 g basil leaves
Spices (ground)
8 red chilies
4 cloves garlic
2 teaspoons turmeric
2 teaspoons ginger
8 shallots
2 tomatoes
1 tablespoon salt
Method :
Rub the chicken pieces with 1 teaspoon of
salt and lime juice. Set aside to stand for 15 minutes. Heat a wok with
oil and saute the ground spices until fragrant. Add the chicken pieces,
turmeric leaf, pandanus leaf, kaffir lime leaves and lemon grass. Fry
for a few minutes, then add enough water to cover the chicken. Bring to
the boil. Simmer until the chicken is tender, then add green chilies,
scallions and basil leaves. Cook until the gravy thickens and serve
while hot.
