Ingredients : Serves 6
380 g lean steak
500 g soybean sprouts
1 tablespoon soy sauce
1 tablespoon sesame oil
1/4 teaspoon ground black pepper
2 cloves garlic, crushed
8 cups water
2 scallions (green part only), chopped
finely
Method :
Wash and drain the soy bean sprouts. Pinch
off the tails and chop roughtly if they are too long. Shred the meat
into fine strips. Marinate in the sesame oil, pepper, garlic and soy
sauce. Heat a wok and stir fry the steak until it changes color. Add the
bean sprouts and water and bring to the boil. Cover with a lid and
simmer for 30 minutes. Remove from the heat, add the scallion leaves and
cover for 5 minutes. Add salt or more soy sauce if necessary. Serve hot.
