Coconut Milk Soup Recipe

This soup is spooned over boiled rice,
not served as a first course by itself.
Ingredients : Serves 6 |

Thin coconut milk
Medium onions, sliced
Curry leaves
Fresh red or green chilies, seeded
Ground turmeric
Salt
Shrimp powder
Thick coconut milk
Lemon juice

Method :

Put thin
coconut milk in saucepan with all other ingredients except thick coconut
milk and lemon juice.

Bring to boil
and simmer for 15 minutes.

Add thick
coconut milk and heat gently, stirring to prevent soup from curdling.

Remove from
heat, add lemon juice and stir.

Serve as an
accompaniment to boiled rice and a dry curry.
