Fried Fresh Noodles Recipe

Ingredients : Serves 4-6 |

Fresh wheat noodles
Bacon or slices of cooked pork
Lean steak
Small shrimps
Oil
Salted soy bean paste
Garlic, crushed
Finely grated fresh ginger
Shredded white Chinese cabbage
Spring onions, cut into 5 cm lengths
Hot water
Light soy sauce

Method :
-
Put noodles
in a colander and steam over boiling water for 15 minutes.

Meanwhile,
remove rind and cut bacon or pork into fine strips.

Cut steak
into paper-thin slices and then into shreds.

Shell and
de-vein shrimps.

Heat a wok,
add the oil and when hot fry the bacon for 1 minute.

Add the beef,
shrimps, soy bean paste, garlic and ginger and stir fry until beef
changes color.

Add cabbage
and spring onions and stir fry 1 minute, then add noodles, hot water and
soy sauce.

Cover and
simmer on very low heat for 5-8 minutes, uncovering and turning noodles
over every few minutes so they do not stick on bottom of pan.

When noodles
have absorbed all the liquid and are soft (but not too soft), the dish
is ready.

Serve hot.
