Mutton and Lentil Rissoles Recipe
(Shami Kebab)

Ingredients : Serves 4 |

Lean meat
Red lentils or yellow split peas
Medium onions, finely chopped
Ground cinnamon
Ground cardamom
Ground cloves
Salt
Ground black pepper
Egg, beaten
Finely chopped mint
Oil for frying

Method :

Use lean
mutton or lamb, or topside beef.

Ask the
butcher to mince it for you, or mince it at home, using fine screen.

Wash the red
lentils or split peas well and put into a saucepan with 2 cups water.

Bring to the
boil, add meat and onions, cook on medium low heat stirring occasionally
until lentils are cooked.

Stir as
mixture becomes dry and continue cooking until liquid is completely
absorbed.

Turn into a
bowl and when cool enough to handle mix in the spices and seasonings,
egg and mint.

Mix
thoroughly, then shape into flat round patties.

Fry in
shallow hot oil until golden brown on both sides.

Drain and
serve hot.
