Ingredients :
5 large green mangoes, peel and stones
removed
4 red chilies, chopped finely
1 teaspoon garam masala
2.5 cups raw sugar
2 cup white vinegar
2 tablespoon fresh ginger, finely
grated
1 cup dates, finely chopped
Method :

Chop
the mangoes into large slices and sprinkle with salt.

Mix the garam masala
with the raw sugar and place in a large pan with white vinegar.

Bring to the boil.

Reduce heat and simmer for
5 minutes.

Add the mango, chili, ginger
and dates.

Simmer for 1 hour or until
the mango is tender.

Pour into warm sterilized
jars and seal.

Store in the
fridge.
