Mackerel with Lime and Garlic Recipe

Ingredients : Serves 4

4 mackerel
2 limes, sliced
2 garlic cloves, cut into slivers
30 ml/2 tbsp dry white wine
Salt and freshly ground black pepper
50 g/2 oz/0.25 cup unsalted (sweet) butter

Method :

Make three large slashes on either side of each of the fish. Press the lime slices and garlic slivers into the slashes, then place the fish in a greased ovenproof dish. Pour over the wine, season lightly and dot with the butter. Bake in a preheated oven at 200°C/400°F/gas mark 6 for about 20 minutes until the fish is cooked through and the skin is crisp and golden brown.
