Soused Herrings Recipe

Ingredients : Serves 4

6 herrings
Salt and freshly ground black pepper
1 bay leaf, chopped
2 cloves
10 peppercorns
150 ml/0.25 pt water
150 ml/0.25 pt white wine vinegar

Method :

Bone the herrings and cut into 12 fillets. Sprinkle with salt and pepper and roll up, skin-side outwards. Place the herrings in an ovenproof dish just large enough to hold them. Sprinkle the bay leaf, cloves and peppercorns over. Mix together the water and vinegar and pour over enough to cover the fish. Cover and bake in a preheated oven at 160°C/325°F/gas mark 3 for 30 minutes.
