Method :
Place the swordfish steaks in a shallow glass or ceramic bowl and sprinkle
with the lime juice, oil and half the coriander. Cover with clingfilm
(plastic wrap) and chill for at least 2 hours, turning the fish
occasionally in the marinade. Remove the fish from the bowl, reserving the
marinade. Brush the fish with butter and grill (broil) under a medium
grill (broiler) for about 10 minutes until cooked through and golden,
turning occasionally and brushing with butter as it cooks. Dot with any
remaining butter, sprinkle with the remaining coriander and serve with
lime wedges. |
