Crudités with Mint Yoghurt Dip Recipe

Ingredients : Serves 4

150 ml plain yoghurt
150 ml soured (dairy sour) cream
30 ml/2 tbsp Mint Sauce

5 ml/1 tsp lime juice
30 ml/2 tbsp ground almonds
2.5 cm/1 in piece of cucumber, peeled and chopped
Salt and freshly ground black pepper

A pinch of paprika
1 red-skinned eating (dessert) apple, cored and sliced
5 ml/1 tsp lemon juice
12 baby sweet corn (corn) cobs
1 red (bell) pepper, sliced
2 celery sticks, cut into matchsticks
2 carrots, cut into matchsticks

Method :

Mix together the yoghurt, soured cream, mint sauce, lime juice, ground almonds and cucumber and season to taste with salt and pepper. Spoon into a serving bowl and sprinkle with the paprika. Toss the apple slices in the lemon juice to prevent discoloring. Arrange the apple, baby sweet corn, pepper, celery and carrots on a serving plate and serve with the dip.
