Mozzarella and Parma Ham Recipe

Ingredients : Serves 4

8 slices of day-old bread, crusts removed

25 g/1 oz/2 tsp butter or margarine

200 g/7 oz Mozzarella cheese, cut into four slices
4 slices of Parma ham
3 eggs, lightly beaten
45 ml/3 tbsp milk
Salt and freshly ground black pepper

Olive or sunflower oil, for deep-frying

Tomato Sauce, to serve

Method :

Lightly butter the bread and sandwich together with the Mozzarella and Parma ham, pressing the edges together firmly. Halve diagonally, if preferred, then wrap in clingfilm (plastic wrap) and chill for 30 minutes if possible.


Lightly beat the eggs with the milk and season with salt and pepper. Dip the sandwiches in the egg mixture until well coated. Heat the oil until a cube of day-old bread browns in 30 seconds. Add the sandwiches, one or two at a time, and deep-fry for a few minutes until golden brown on both sides. Fry (saute) the remaining sandwiches and serve hot with tomato sauce.
