Tomatoes with Herbs Recipe

Ingredients : Serves 4

4 beefsteak tomatoes
Salt and freshly ground black pepper

150 g/5 oz full-fat soft cheese

30 ml/2 tbsp creme fraiche
1 garlic clove, crushed
30 ml/2 tbsp snipped chives
30 ml/2 tbsp chopped parsley

30 ml/2 tbsp chopped cress
Juice of 1/2 lemon
A few drops of Worcestershire sauce

1 head of radicchio, shredded
1 head of chicory, sliced
A few drops of raspberry vinegar
5 ml/1 tsp olive oil

Method :

Cut the tops off the tomatoes, scoop out the seeds and place upside-down on a rack to drain. Sprinkle the insides with salt and pepper. Mix together the cream cheese, creme fraiche, garlic, herbs, cress, lemon juice and Worcestershire sauce. Season to taste with salt and pepper. Fill the tomatoes with this mixture. Arrange the radicchio and chicory on a serving plate and sprinkle with the raspberry vinegar and oil. Stand the tomatoes on top and serve at once.
