Tropical Fruit Cocktail Recipe

Ingredients : Serves 4

1 avocado, peeled, stoned (pitted) and sliced
15 ml/1 tbsp lemon juice
1 papaya (pawpaw), sliced
2 kiwi fruit, sliced
1 bunch of spring onions (scallions), sliced
225 g/8 oz/2 cups Gouda (Dutch) cheese, diced
100 g/4 oz cherries, stoned (pitted)

For the dressing:
45 ml/3 tbsp cider vinegar
5 ml/1 tsp clear honey
30 ml/2 tbsp walnut oil
Salt and freshly ground black pepper

15 ml/1 tbsp sparkling white wine

A little angostura bitters

Method :

Toss the avocado in the lemon juice, then carefully mix together all the remaining cocktail ingredients.
To make the dressing, mix together the cider vinegar, honey and oil and season to taste with salt and pepper. Pour over the salad, toss carefully and leave to chill for 30 minutes. Arrange the salad in cocktail glasses, add a dash of sparkling wine and sprinkle a little angostura bitters over before serving.
