700 g/1.5 lb/4 cups split peas, soaked overnight in cold water, then
drained
2 onions, chopped
1 carrot, chopped
1/2 turnip, chopped
1 celery stick, chopped
2 parsley sprigs, chopped
1.5 liters/2.5 pts/6 cups Vegetable Stock
Salt and freshly ground black pepper
150 ml/0.25 pt single (light) cream

Method :
Place the split peas in a large saucepan with the onions, carrot, turnip,
celery, parsley and stock. Bring to the boil, cover and simmer for about
30 minutes until soft. Puree in a food processor or blender, then return
to the pan. Season, stir in the cream and reheat gently before serving. |
