Separate leek bulb from
leek greens.

Cut the bulb diagonally
and shred the leaf portion.

Remove old veins from
celery, rinse and cut into pieces.

Rinse and slice the
tomato.

Cube tofu.

Heat 1 1/2 tablespoons oil
in a wok.

Stir-fry leek bulb until
fragrant.

Add tomato and stir-fry
until fragrant.

Sprinkle with wine.

Add tofu and stir-fry.

Cover with lid and braise
for 5 minutes.

Add ketchup, celery, sugar
and salt.

Stir-fry evenly.

Lastly sprinkle with
shredded leek for serving.
