Wash the crab, then scoop
out the roe and meat.

Horizontally cut tofu in
half, cut again into a 3 cm thick quarters.

Dig a crater in the middle
of the tofu and and sprinkle evenly with salt.

Fill the crater with
crabmeat.

Place crab roe on top of
each tofu.

Place the crabmeat tofu on
a plate.

Steam in steamer for 8
minutes, remove.

Put the remaining
crabmeat, ketchup, sugar, vinegar and ginger juice in the stock to
bring to boil.

Thicken with cornstarch
mixed with 1 tablespoon water.

Sprinkle with sesame oil.

Pour the cooked crabmeat
tomato sauce evenly over the steamed tofu for serving.

Serve hot.
