Method :

Cut tofu into small equal
squares, sprinkle evenly with salt, then coat each with flour.

Mix ingredients A well to
make a batter.

Dip tofu in, deep-fry in
hot oil until golden brown. Remove.

Cut onion and green pepper
into small pieces.

Cut each slice of
pineapple into 4 pieces.

Remove stems from garlic,
pat with flat side of knife to remove skin, chop finely.

Heat 2 tablespoons oil in
wok.

Stir-fry onion and garlic
until fragrant.

Add well mixed ingredients
B which has been stirred until thick and sticky.

Add tofu, pepper and
pineapple. Mix well, remove from heat and serve.
Note : When in season, fresh
pineapple may be substituted for canned.
