Method :

De-vein shelled shrimp,
rinse, dry and chop until mashed.

Strip off and discard legs
and head from whole shrimp (do not remove tail), devein shrimp,
rinse and dry.

Crush water chestnuts,
chop finely and squeeze dry.

Mash tofu, add mashed
shrimp and ingredients A.

Mix well and add water
chestnuts.

Grease six molds with oil,
stuff tofu mixture inside and top with a shrimp.

Steam over high heat in a
steamer for about 8 minutes.

Peel off greens leaf by
leaf, rinse and blanch in boiling water.

Then rinse under cold
water, squeeze dry and arrange on a serving plate with tofu in the
center.

Combine ingredients B
evenly, cook to thicken and pour over the tofu.

Serve hot.
Notes : Before mashing tofu,
remove the hard edges. The tofu will stick to the mold if not
greased. Wrap chestnuts in plastic to prevent splattering.
