Field mushrooms are the wild relatives of
the cultivated mushroom and when cooked have a wonderful aroma. Flat
mushrooms, although indistinguishable from field mushrooms in
appearance, have probably been cultivated and are also excellent.
Connoisseurs say that only wild mushrooms have any flavor but many would
argue against this. However, if you know where to find field mushrooms,
keep the secret to yourself and count yourself lucky!
Field mushrooms are sometimes available
during the autumn in farm shops. Since they are likely to have been
picked recently, they should be fresh unless obviously wilting. Unless
you intend to stuff, don't worry if they are broken in places as you
will be slicing them anyway. Use as soon as possible after purchase.
