100 g/4 oz/1 cup self-raising (self-rising) flour
2 eggs, beaten
50 ml/4 tbsp milk
Salt and freshly ground black pepper
225 g/8 oz courgettes (zucchini), grated
15 ml/1 tbsp dried oregano
30 ml/2 tbsp olive oil
Method :
Whisk the flour, eggs and milk to a thick batter and season with salt and
pepper. Mix in the courgettes and oregano. Heat the oil in a large frying
pan (skillet) and fry (saute) spoonfuls of the mixture for a few minutes
each side until golden brown. Remove from the pan and keep warm while you
fry the remaining fritters. Serve immediately.
